#5 - Make Two New Recipes

So Monday night my plan was turned upside down by the rain, I am not complaining though, I loved the cooler temps and having the house wide open to smell the rain. I also didn't have to water the garden while the husband is gone in Wyoming. The item will be done later on...

New plan, make two, not one, recipes from my ever growing stack that I have collected over the last few years! I subscribe to Real Simple magazine, one of the very few that I do get monthly, and I really enjoy it from cover to cover. Especially the recipes because each one has a beautiful picture next to the recipe. So for the past few years I have been tearing out the recipes that look good to me, sound easy to make or that I think the kiddos and hubby will like.

Of course I have followed a recipe before in life, I really enjoy cooking! However, in the past three years, I have never made a recipe from Real Simple, nor have I ever made two recipes in one session. So I set out to make two salad recipes that I cut out for me personally, the kiddos wouldn't touch either with a ten foot pole, although I still may try it out on them. And the 2nd recipe I am pretty sure Robert would not enjoy, but I have been surprised before.

I made both and I truly enjoyed both of them and both were "real simple"! So the next time I am invited over for a potluck, I will probably be bringing the lighter of the two, well the one with less ingredients that I think most adults would like.

The first - Corn Feta Salad
4 C - cooked or raw corn off the cob
(the girls at work decided frozen would work fine and be easier!)
1 C chopped walnuts
2 jalapenos, seeded and chopped
2 T lime juice
2 T extra-virgin olive oil (I used jalapeno infused grapeseed oil)
kosher salt and black pepper
1/2 cup crumbled feta (2 oz)

Heat over to 400, spread the walnuts on a rimmed baking sheet and toast until fragrant (do not burn), about 6 - 8 minutes. Let cool and roughly chop. (I forgot this step and it still turned out great.)

In a large bowl, combine the corn, jalapenos, lime juice, oil, walnuts and salt and pepper. Sprinkle with feta before serving.

I mixed everything together and forgot about toasting the walnuts and it still turned out great but I can assume that the walnuts might get a little mushy and the feta may loose some consistency over time because it's mixed with the lime juice and oil. But so far happy eating!!
